Baileys Fruity Christmas Loaf Recipe
This week we headed over to the Returns Department house for some Christmas baking with Jackie!
Ingredients
6oz Plain Flour
6oz Caster Sugar
6oz Margarine
½ tsp Baking Powder
2 Large Eggs
¼ Pint Baileys
6oz of mixed dried & fresh fruit (Of your Choice)
Icing Sugar
4oz Icing Sugar
1 tbsp warm water
I tsp Vanilla Flavouring
Method
Heat oven to 140C/Fan. Butter and line a 1lb loaf tin with grease proof paper.
In a large mixing bowl, cream the butter and caster sugar together until light and fluffy.
Add eggs, sieve flour and baking powder into the bowl whisk through, then add all the fruit mix and Baileys. Fold/stir the mixture with a spoon till all combined.
Pour the mixture into your prepared loaf tin. Bake for 1Hr 10mins (Test with a skewer to see if cooked)
Remove from oven and wait 10 minutes, then remove from tin and place on a cooling rack.
While the loaf is cooling mix the icing for the top. Use a Spatula to spread over the icing.
Finish off by sprinkling some of the fruit on top for decoration.
